Peel the potatoes. Wash them. Cut into slices with a mandolin.

Put at least 100 ml of oil in a frying pan (or more if needed) and heat over high heat. When hot, carefully add the potatoes and fry, stirring from time to time so that they are cooked evenly on all sides.

When the potatoes are almost done, chop the onion and add to the pan.

When the potatoes begin to color, remove and drain the oil.

In a large bowl, beat the eggs and egg whites with the chopped garlic, parsley, salt, pepper and turmeric. Add the potatoes and mix everything together.

In another non-stick frying pan put a few drops of oil and place over high heat, when it is hot add the omelet mixture. Let it cook on one side, and when it comes off the edges of the pan, turn it over with a plate and put it back in the pan to cook on the other side.
