Chop the onion and garlic and place in a pan with a tablespoon of EVOO and add a pinch of salt to poach over medium heat.

Chop the carrot and peppers and add to the pan along with the peas and corn (medium heat).

While it is cooking, chop the cauliflower in a food processor or grate it (it will take a little longer). Once the cauliflower is chopped, add it to the casserole.

Add salt and pepper to taste (you can also add other spices such as sweet paprika or curry), cover and leave for about 15 minutes until you see that the cauliflower has remained a little. From time to time go stirring. If you see that it starts to stick, add half a glass of water.
