In a large frying pan or wok put a drizzle of olive oil. When it is very hot add the garlic, the onion and the chopped carrot. Let them fry over medium high heat for about 5 minutes.

While the vegetables are frying, chop the zucchini into slices and leave them ready.

When the vegetables are fried add the minced meat, the crushed tomato, a pinch of coarse salt, ground pepper and nutmeg and leave for about 5 minutes over medium high heat and remove from the heat.

In a tray suitable for oven we put a layer of zucchini and another one of meat, being the last layer of zucchini on top. Cover the tray with aluminum foil.

With the oven preheated to 220 degrees, we introduce the tray at medium height and leave it for 1 hour.

After the hour, remove the tray from the oven, remove the aluminum foil and add the grated mozzarella. We introduce the tray in the oven with the gratin mode at maximum power and leave it until it is well browned.
