Clean the thighs and remove the fatty parts. Season with salt and pepper and add thyme. Brown in a frying pan with the EVOO.

Set aside the oil from the chicken for later. Place the chicken in a baking dish and bake for 20 minutes in a preheated oven at 200.

Chop the onion into julienne strips and sauté in the chicken oil until soft. Add the sliced mushrooms and sauté for 3 more minutes.

Add the brandy, increase the heat and reduce for 2 minutes. Add the cream and cook for 2 minutes more. Add salt and pepper to taste.
