Microwave stuffed mushrooms

Wash the mushrooms, separate the stems and set aside.

Chop 1/2 onion and 1/2 carrot, finely chopped

Finely chop the piquillo bell pepper, the corn, the garlic clove, the mushroom stems and the Serrano ham.

In a bowl mix the chopped ingredients and add the Parmesan cheese (or any grated cheese you like).

From three eggs we use 3 yolks and one egg white and add it to the mixture (the other 2 egg whites are not used but can be saved for something else).

Fill the mushrooms with the previous mixture and put a little olive oil on top (I have used oil spray but you can use a bottle or a teaspoon of coffee).

On top of the stuffed mushrooms we put grated mozzarella cheese or any cheese that melts well.

Put the mushroom tray in the microwave for approximately 10 minutes. This will of course depend on the power of the microwave. If you have a microwave oven with salamander you can put the salamander to brown the cheese.
