Carne mechada with Jackfruit

Wash the Jackfruit well (I usually buy it in brine) and cut it, as well as the onion and half a red bell pepper.

In a medium saucepan, sauté the onion and the bell pepper until soft. Add the Jackfruit and mix well, add the soy, paprika and parsley and mix again. When a couple of minutes have passed, add the vegetable broth until it is covered and let it be consumed little by little.

As the Jackfruit is "cooking" we can undo it with a fork or a spatula, simply mashing it a little, add the fried tomato and a little more vegetable broth. Mix everything well and let it reduce over low heat until it has practically no water, correct the salt and that's it.

It can be eaten like this directly. Or as if it were a normal meat sandwich with tomato. *The quantities are always approximate.
