Roast the eggplant in the oven for about 40 minutes (until soft).

Cook the pasta. Cut the chicken into small pieces, like cubes, marinate to taste and cook in a frying pan with a little oil.

When the eggplant is ready, beat it: Eggplant, fresh cheese, a little lemon juice, salt and pepper.

Once ready, add the mixture to the chicken and mix. Then add the pasta and mix again until everything is integrated.
