If you do not have a bread machine, mix the dry ingredients on one side and the wet ingredients on the other, the water temperature must be between 20-25°. You have to knead for 5' then let it rest for 3', and repeat the kneading and resting process 4 times, then let it rest in the oven covered with a damp cloth (reheat at 50° for 5' and cut), about 3h. Shape and bake at 180° for 50' but you must put a tray with water underneath.
