The night before we cook the tongue in the express pot with a carrot (no need to peel it) and an onion. You don't need to bother to make sure it looks good as it will be discarded. Let it boil for 50 minutes.

The next day, we take out the tongue and remove the skin and the mucus that sticks to it. We cut it into slices. The thinner the better and reserve in a tupper in the refrigerator. Do not throw away the broth because we will need 400 grams for the sauce.

Put the oil in a casserole. Cut the vegetables (1 onion, 3 carrots, garlic, tomato and red bell pepper) and put the pan on the fire. Add the onion and garlic at the same time and let them cook for a couple of minutes. Add salt and rosemary. Add the carrot and let it cook a little while stirring.

Add the tomato and bell pepper at the same time and continue stirring until you see that they are being cooked. Take the 400 grams of broth from the tongue and add it together with a little salt and black pepper. Cover the casserole and lower the heat so that it cooks little by little.

In the meantime, we take a frying pan and put the oil. Take the tongue out of the fridge. Beat an egg in a plate with a little salt. We put the frying pan to the fire. When it gets hot, dip the tongue in the egg and add it to the frying pan. We wait for it to cook on both sides and we put them on a plate. Reserve the frying pan.

When the sauce has been cooking for 30 minutes, remove from the heat and add salt. Whisk and transfer the sauce to the frying pan used to prepare the tongue. Add the tongue to the sauce and put it on the heat for 10 more minutes.

All that's left is to plate and eat 😋🍽.
