Boil the water and while in a frying pan with a drop of olive oil, toast 50 grams of sushi rice or round grain rice.

When the water starts to boil, add the rice and cover for 10 minutes, stirring from time to time.

Let all the water be consumed and add 10 ml of rice vinegar, 2 g of erythritol, a pinch of salt and a few drops of soy sauce, mix and set aside until cool.

Line the semi-sphere mold with cling film and spread the bottom of the paper with a silicone brush and a few drops of olive oil. Separate the slices of smoked salmon and cover the bottom of each hole and if there is any left over, cut it out and put it inside, fill it with rice, then carefully unmold, plate, pour a little olive oil on top and a pinch of salt and it's ready. Serve with soy, soy with wasabi or a little yogurt with mayonnaise.
