In a frying pan with two tablespoons of EVOO, fry the vegetables in the following order: onion, carrot, leek and zucchini.

On the other hand, heat a glass of water in a pot, and once it starts to boil, remove it from the heat, add the couscous, cover and wait about 7-10 minutes for it to absorb the water.

Once the couscous is hydrated, pour it into the pan with the vegetables and cook for a couple of minutes over low heat to mix everything well.

Once finished and served, add some chopped walnuts to give it a crunchy touch.

Soy sauce or spices can be added, but this is more according to personal taste.
