Chop all the vegetables.

Put a couple of tablespoons of oil in the pan and fry all the vegetables: I add them in this order: onion, leek, zucchini, peppers, carrot.

I let it sauté for about 30 minutes and add the spinach and then homemade natural tomato sauce. I leave it for 10-15 minutes.

I have prepared the ratatouille with the vegetables I had at home, it is enough for approximately 4 servings (I keep it in the fridge and I take it one day with egg, another with tuna or in fajita...).
