Pinto beans with vegetables and potatoes

Leave the beans to soak overnight. Wash and cut the vegetables as you like (I cut the onion and the peppers in small pieces and the carrot in half moons). We also peel the potatoes and cut them into large cubes. We put in a cauldron a jet of oil and add the onion and the peppers, cook for 5 minutes and add the beans and the carrot together with the water covering everything well and leaving about 2 or 3 centimeters more on top.

As soon as it boils, cook for about 10 minutes and add the potatoes and salt. Then cook for 30 or 35 minutes more. Taste if the beans are tender and if the salt is right, add the spices and cook for about 5 minutes.
