Preparación de la receta

Chop the onion finely to make a frying sauce in EVOO. Once sautéed add the tomato, season and fry it. Add the paprika and fry for another minute.

Add the potatoes, squash and green beans. Cover the vegetables with water and bring to a simmer.

After 20 minutes add the chickpeas and cook for another 10 minutes.

Add the previously roasted peppers and cook for another 5 minutes.

Season to taste.
