The night before, put the frozen blueberries and strawberries in a clean jar with a squeeze of lemon (I put about 1/2 lemon juice) and let it sit overnight outside the refrigerator.

You can make the crêpe batter the night before if you want and let it rest in the refrigerator or you can make it the same day.

Add the egg whites, oatmeal, milk, vanilla and cinnamon to taste in a shaker or other container.

Mix all the ingredients well and add them to a frying pan greased with EVOO and preheated to medium temperature.

Makes about 5 thin crepes ENJOY
