If fresh, wash, dry and chop the spinach and sauté in a large frying pan with a drizzle of olive oil until cooked and dry. (If frozen, prepare according to the manufacturer's instructions).

Beat the eggs in a bowl. Drain the spinach well, squeezing it to remove as much liquid as possible. Mix the spinach with the eggs. Season with salt and pepper.
