Quick and easy banana pancakes

Beat the eggs in a bowl

Mash the banana with a fork on a plate.

Add the banana to the eggs and mix well.

Heat a non-stick frying pan over medium heat and add a little oil (I use coconut oil because I like the flavor it gives).

Add the batter to the pan. My pan is about 10cm in diameter and, making one at a time, 3 pancakes in total (perfect breakfast for one person). About two minutes on each side over medium heat (I flip them with a plate and they are perfect).

Serve and ready!!! For breakfast I sometimes add fruit, like about 5 sliced strawberries or a handful of blueberries and I accompany it with a green tea without sugar 😉👌.
