The chicken will have been bought in pieces. Season with salt and pepper and set aside. Cut the onion and the bell pepper in julienne and the carrot and the garlic in slices.

Put the AOVE in the casserole and when it is hot, add all the ingredients: chopped chicken, onion, garlic, carrots, bell pepper, crushed tomato (it can be canned or you can grate 2 tomatoes), salt and pepper.

Stir to mix the ingredients, cover and leave over medium heat for about 35 minutes (until the carrot and bell pepper are soft), keeping an eye on it and stirring a couple of times.
