Cut the chicken into small pieces, fry in a pan with oil and set aside.

Cut the onion, bell pepper and carrot, and in the same pan fry first the onion and then the bell pepper and carrot.

When the vegetables are ready add the chicken, peas, artichokes, crushed tomato and saffron. Stir so that everything is well mixed.

Add the rice and chicken broth. Let it cook for about 20 minutes.
