Red curry chicken with vegetables

In a frying pan or wok fry some garlic in EVOO. Add the red curry and a splash of coconut milk. Stir and melt the red curry paste.

Add the chicken and stir until done. Add the chopped vegetables to taste. Add a tablespoon of soy sauce. Bring to boil.
