Sautéed rice noodles with vegetables

Cook the rice noodles for a couple of minutes (follow the manufacturer's instructions).

Cut all the vegetables to about the same size and add them to the pan (or wok) over high heat with a little olive oil.

Add the cooked noodles, soy sauce and sesame oil. Stir a little and turn off the heat. Serve it and put the poached egg on top and that's it!
