In a saucepan, sauté half an onion and a chopped clove of garlic over medium high heat with EVOO. Add salt to taste.

Chop the rest of the vegetables and add to the pot, stir well.

When the vegetables start to get soft, add the spinach.

Soak the lentils in water until they come out clean, and add them to the stew (they do not need to be soaked beforehand). Stir well.

Add the coconut milk and a small glass of water and increase the heat to maximum, when it starts to boil, lower to medium low heat and let them cook slowly. Add the curcuma and curry to taste. If it sucks too much, add water little by little.
