Potato and salmon timbale

Wash the potatoes and place them in a pot with water and a pinch of salt. Cook the potatoes for about 35 minutes.

Peel and cut the onions into rings. Pour AOVE in the pan and let the onion rings cook, covered and over low heat, until they are soft.

Drain the potatoes, let them warm and cut them into slices, season with salt and pepper and brush each one with a few drops of olive oil. Cut the smoked salmon into slices.

Assemble the timbales. To do this, put a slice of potato on the serving plate, place on it a couple of slices of salmon and some onion rings. Repeat the series once more, finishing with some onion rings. Repeat the same process until all the timbales are assembled! Decorate them with herbs!
