We must remove the skin and wash the yucca, then put it in a pot to cook or if you have a pressure cooker to reduce the cooking time until it is soft, (this can be done 1 hour before or the day before to let it cool and be able to mold the arepas better).

When the yuccas are cold, they should be grated or passed through a potato masher until they have the consistency of dough, then add salt to taste and 1 tablespoon of olive oil, then form the arepas to the size and thickness you want.

With the arepas already made, place them on a griddle or in a frying pan until they get a little golden color on each side, (they should be opened hot because if not when trying to open them cold they will lose their shape).

For the filling, put a head of finely chopped garlic in a bowl, add the avocado, salt, pepper and the juice of one lemon, and mix well until it looks like guacamole.

To the previous mixture add onion, tomato, cilantro and the previously cooked chicken, all well chopped, and integrate the ingredients very well.

Once the filling is ready, just put it inside the arepas, serve and enjoy this delicious recipe 🤤.
