Marinate the salmon loins for at least 2 hours in the mixture of orange juice, lemon juice and soy.

In a saucepan, put the coconut oil (or butter is also ok) with a little of the marinade. Mix well until it boils and set aside.

In a non-stick frying pan, put a little olive oil and cook the salmon loins 3' on each side.

Serve on a plate with the sauce and garnish with chopped parsley.
