Peel the yucca and cut it into small pieces, eliminating the central part.

In a bowl, add EVOO, salt, pepper and oregano (or the spice of your choice) and add the yucca to impregnate it.

Place the yucca in the oven at 200°C for 20 minutes, heat up and down and then 10 minutes more with air.

In a frying pan with a few drops of EVOO, cook the egg on the griddle with a little salt.

Once the yucca is ready, take it out of the oven and serve it in a plate with the egg on top... And enjoy! 😋😋
