GNOCCHI IN EMMENTAL CHEESE SAUCE 🔴 INGREDIENTS: For the gnocchi: ✔️ 2 small boiled potatoes. ✔️ 70g flour. ✔️ 1 egg yolk. ✔️ Nutmeg ✔️ Olive oil For the sauce: ✔️ Light cream. ✔️ Whole milk. ✔️ Pepper. ✔️Salt ✔️ Emmental cheese 🔴 PREPARATION: 1️⃣ In a bowl, mash the cooked potatoes. Make a hole in the middle and add the egg yolk, nutmeg, a drizzle of oil and gradually add the flour. Stir until you have a potato dough that does not stick. I have used about 70g of flour, but if you see that the dough is still sticking, you will have to add some more.

2️⃣ Sprinkle a little flour on a board and cut a small piece of the dough. We give it the shape of an elongated sausage and not too fat. We cut into small pieces about two cm wide and shape with a fork the gnocchi. - How to shape the gnocchi? Put a small piece of the dough on a fork and press lightly with the palm of your hand or with your fingers on the dough along the fork.

3️⃣ Bring water to a boil. Once it is boiling, add a pinch of salt and add the gnocchi. They will be ready once they rise to the surface of the boiling water. 4️⃣ While they are boiling, prepare the sauce: in a pan, put the cream, a splash of milk, pepper, salt and emmental cheese. Leave over medium-low heat stirring until the cheese melts and add the gnocchi. Stir. 5️⃣ Serve and sprinkle with oregano, basil or Provencal herbs. This step is optional. EAT! I hope you like it ✨
