INGREDIENTS 📝 FOR THE NACHOS: 100gr chickpea flour. 40ml water 2 tbsp EVOO 1 pinch of salt FOR THE PICO DE GALLO: 1 tomato 1/2 red bell pepper 1/2 green bell pepper 1/2 small onion Juice of 1/2 lime Chopped fresh cilantro Salt and pepper FOR THE SOUR CREAM 200 ml yogurt Juice of 1/2 lemon 2 tsp white vinegar 1 pinch of salt AND YOU WILL ALSO NEED Jalapeños Grated cheese

We start with the nachos: Just mix all the ingredients and knead with your hands until you get a homogeneous dough. It won't take you much work, in 2 minutes you have the dough ready. Preheat the oven to 170°. Meanwhile, on a clean surface, put more chickpea flour and with the help of a rolling pin stretch the dough into a very thin sheet. To prevent the dough from sticking to the rolling pin, pour some flour on top, without fear. When we have our dough well stretched we cut it into rectangles. Place the nachos on the baking tray, previously covered with parchment paper, and put them in the oven for 10-15 min. Make sure they don't get too toasted. Remove from the oven and set aside.

We continue with the pico de gallo: We wash and chop the vegetables in brunoise and mix it with the juice of half a lime, chopped cilantro, salt and pepper. Set aside.

And finally we prepare the sour cream: We mix all the ingredients and set aside.

WE ASSEMBLE OUR NACHOS SAN FERNANDO: In a bowl we place the nachos, cover with grated cheese and put it in the oven for a few minutes, taking advantage of the residual heat that remains after having previously cooked the nachos so that the cheese melts. Take them out of the oven, add the pico de gallo, the sour cream and a few slices of jalapeños and... Eat them before they cool down!
