Spaghetti carbonara without cream

We put water in a saucepan to boil. While the water is heating, cut the cooked ham into small pieces and start cooking it in the pan. Cut the onion into small pieces and add it to the pan. Cook over low heat until it poaches well.

When it starts to boil, add the spaghetti to the water.

Separate the yolks from the whites. You can reserve the egg whites to make a cake or an omelet later. In the bowl with the yolks add one egg (there are two yolks and one egg) and beat it. Add a handful of Parmesan cheese.

When the pasta is ready (10 min approx) add it to the pan with the ham and onion and mix over medium-low heat (5/9 in my vitro). Add the egg with the cheese to the spaghetti and mix without the fire (i.e. either lift the pan from the heat or put it aside). When it is mixed, put the pan back on the fire and stir until it is as we want.
