Prepare the stuffing. Chop the feta cheese, tomatoes, parsley, basil, season with salt and pepper and add the lemon zest. Chop and mix well.

Open a small pocket in the breasts on one side and put the mixture in it.

In a frying pan add a little of the oil from the tomatoes and add the breasts over medium heat, and cover with a moistened baking paper.

Check for doneness, moistening the baking paper if it dries out, and cook on both sides until the chicken is done.
