First, to make this sauce I use a hand blender to grind and a mixing glass to put each ingredient together.

Clean the basil and remove the stem. Very important because the stalk is bitter! We are only interested in the leaves.

Chop the garlic cloves and the almonds. Here comes the trick! We beat the garlic and almonds together with the oil and a few drops of lemon juice before adding the other ingredients.

When the mixture is smooth, add the basil and Parmesan cheese (to taste) and blend again.

Remember! Pesto is a sauce, not a cream. You should not mash the mixture too much because you will end up with a puree!
