Heat the water in the microwave for 30 seconds.

Mix the warm water with the fresh yeast. Let stand for a couple of minutes.

In a bowl, pour the flour and make a hole in the center, like a volcano. In this hole, add the mixture of water and yeast and integrate everything.

Add salt and EVOO. Pour the mixture on the worktop and knead to integrate all the ingredients very well. If it still sticks to your hands, add a little more flour. Knead for a couple of minutes.

Form a ball with the dough and let it ferment in the covered bowl for approximately 30-45min.

Divide the dough into 2, cutting it with a knife. If we only use one, the other can be frozen and when we want to use it we take it out 45 minutes before to thaw well.

Preheat the oven to 180 degrees, prepare our pizza to taste and bake for 20-30 minutes depending on how well done we want it.
