To make the pizza dough. To do this, mix the chickpea flour (oatmeal, spelt, etc.) with the yeast and salt and add water little by little until you have a non-sticky ball of dough that can be handled.

Let the dough rest for about 10 minutes covered with a cloth.

Meanwhile, cook the zucchini and onion in a frying pan with EVOO and salt until well poached.

Once the dough has rested, place it on a piece of parchment paper and knead it until it is round and thin.

Put the dough in the oven (previously preheated to 180°) for about 5-8 mins. Until it is hard

Remove the dough from the oven and add the ingredients: put the Philadelphia as a base, then add the mozzarella, then the poached zucchini and onion and finally the goat log.

Return to the oven for another 10 minutes (keep watching).
