Whenever I make bread I always take out a ball to make sourdough. And that's what I do, I follow iban Yarza's instructions, refresh the ball with 60 grams of flour and 30 grams of water, leave it overnight in a warm place to ferment.

The next day I refresh it again with 90 grams of flour and 45 grams of water, and leave it again in a warm place to ferment. It has to double its size.

Once the sourdough is active I dissolve it in water 330 grams of warm water, I use warm water to remove acidity, add the salt and flour to the bread maker

Knead for 10 minutes and let stand for 30 minutes. Repeat the operation

Knead again for another 10 minutes, remove the kneading rods or spatulas.

Leave to ferment overnight. I turn off the breadmaker

Bake for one hour according to finishing taste
