Soak the dates in warm water and let them hydrate for 15 minutes.

In the meantime, peel the apples and slice them. Set aside a few pieces to mash with the dough. Set aside.

Grate the peel of one lemon and set aside. Squeeze the lemon juice and pour over the reserved apple slices to prevent them from oxidizing.

When the dates are hydrated, add the sifted spelt flour, one sachet of baking powder and the grated lemon peel.

Add the butter, the 3 eggs and the reserved apple pieces. Mash well so that everything is integrated. Preheat the oven to 180°.

Grease a baking dish and pour the mixture into it. Place the reserved apple slices on top and bake for 50 minutes or until a fork comes out clean when pierced.
