Cut the leek into slices (white part only) and fry in a pot with EVOO over medium heat.

Peel, wash and chop the potato and separate the cauliflower into small florets.

Once the leek is transparent, add the potato and cauliflower. Stir and let them cook for 3-4 minutes.

Then add the vegetable broth (if it is homemade, it is better) and turn up the heat so that it starts to boil.

When the vegetables are done (soft) add the cream, salt, pepper (½ teaspoon) and curry (1 teaspoon).

Finally, blend everything with the blender and serve (you can taste it before in case you want to add a little more spices). I have added some seeds for decoration that also give it a crunchy touch😋.
