Chop an onion and let it fry with a little olive oil in the pan for 5 minutes. Add the tomato, stir and let it cook over medium low heat (4-5) for 10 minutes. Add a splash of brandy and increase the heat (7-8) stirring all the time for a few minutes so that it does not stick and the alcohol evaporates. Lower the heat again (4-5), add the spices: two or three drops of Tabasco and black pepper and stir. Add more spice if necessary but be careful because it is easy to overdo it and ruin the dish.

Add the squid, preferably fresh (frozen squid tend to remain a little harder), cover the pan and let it cook for half an hour. After about 30 minutes over medium low heat so that it does not stick, remove the lid, stir and add a small amount (1 gr.) of ink (sold frozen in sachets). Stir to darken the sauce a little and ready to serve 🤤.
