Cut the plantains into 3-4 large pieces and cut them in half (lengthwise). They are green plantains, although you can also combine two green and one ripe, or all ripe, according to taste (I love green only).

Heat olive oil (you don't need to cover the plantains completely but you need enough oil) and fry the plantains at medium-low temperature for about 15 minutes. It is basically like frying potatoes, so that they are soft inside and look cooked. Keep in mind that ripe plantains take less time to cook than green plantains.

Remove the banana to a bowl and mash it, as if it were a puree.

Cut the onion and cheese into small pieces, season to taste and mix it all together. Then make a ball with your hands. With that amount of plantain you will get two big balls.
