Preparación de la receta

First we peel and cut into large slices two potatoes. Boil them for about 5 minutes (until they are soft but do not fall apart).

Cut the onion into medium-sized squares and fry until golden brown. Reserve some of the onion to decorate the dish.

In a bowl mix the cottage cheese, the cooked potato and the onion. Mix everything well with a fork and add salt and black pepper to taste.

For the dough we have to put in a bowl 250 gr of wheat flour, make a hole in the center and add 40 gr of butter, 100 ml of hot water and a teaspoon of salt. Mix everything well and extend the dough with the help of a rolling pin (if you do not have one, you can use a bottle). Once the dough is stretched, cut it into circles with the help of a glass and fill it with the previous mixture, as if it were a patty. Try not to fill it too much so that it does not come out when boiling.

Once all the pierogi are formed, boil them in salted water for five minutes (be careful because if you leave them too long, they will open and the filling may come out). Finally after boiling the pierogi we will pass them through the frying pan with a little bit of olive oil to brown them. They can be served with the onion that we have reserved before.
