Boil the green beans (also called 'bachoca'), after 5' add the carrots. When they are almost cooked (normally 7/8' more) add the potatoes and a pinch of salt. Leave it until the potatoes are done and remove.

Then pour a few drops of vinegar on top and let it cool down to room temperature.

Once cooled, chop all the ingredients to taste (you can also chop everything before boiling) and mix in a bowl with the tuna, eggs and mayonnaise.

HOMEMADE MAYONNAISE: whisk (1 egg + a few drops of vinegar or lemon + salt + EVOO). Tip from my 👵🏻: introduce the oil little by little while moving the mixer up and down, until you get the desired texture. Therefore, throw in as much oil as you consider necessary; keep tasting it and you will get the perfect texture.
