Mix the wet ingredients (3 eggs, 1 natural protein yogurt, 35 ml EVOO, 1 🥄 dita vanilla and 80 gr. baked apple) with the help of a hand whisk and then add the dry ingredients in the same bowl: 40 gr. rice flour+ 40 gr. oat flour, 1/2 teaspoon baking soda, 1/2🥄 dita baking powder, 25 gr. pure cocoa.

Pour the mixture directly with the help of a spoon and fill previously greased silicone molds (they are better without paper). Bake in the Airfryer ♨️ for 14 min. at 180⁰. Approximately 8. Allow to cool on a wire rack.

For the frosting 🍦 mix 80g of whipping cream with 80g of cream cheese or mascarpone + 1 🥄 dita of vanilla. Keep in a piping bag in the fridge until use and add on top of the muffins with a 🥄 dita of pure cocoa nibs or pieces of nuts for a crunchy touch. Serve with some fruit and/or your favorite 🥛 drink to enjoy a delicious breakfast or snack.
