Mix all the ingredients in the thermomix 20", speed 6. Remove from the mixing bowl, roll into a ball, wrap in cling film and leave to rest in the refrigerator for 20 minutes.

Flour the table and with a rolling pin roll out the dough into a rectangle. Make 3 folds on itself and repeat the operation 4 more times. Wrap in plastic wrap and let it rest in the refrigerator for 20 minutes. Roll out again and use as desired.

For the palmeritas: Preheat the oven to 200 °C. With the dough already rolled out, sprinkle with eretritol and press a little with a rolling pin to make it stick to the dough. Fold the dough, each end towards the center and fold in half, cut into cylinders of about 1 cm. Place on the baking sheet with paper and bake 15 min. 📌 Tip's: ➡️Very important that the flour contains between 11-12% gluten.
