Peel the potatoes and dice them. Julienne the onion. Fry in a frying pan with a tablespoon of oil.

Beat the eggs with the parsley and garlic salt and a pinch of salt.

When the potatoes and onion are ready, add them to the egg mixture and stir to soak them well. In the meantime, heat another frying pan. You can use the oil in which the potatoes have been fried to paint the frying pan.

When the pan is hot, add half of the mixture to the pan to curdle. Now it's time to add the extra ingredients: the mozzarella and the ham (you can also add sweet ham, peas, etc.) and finish pouring the other half on top.
