I am going to divide the steps by type of omelet so you can see each one more closely. I have made them in a small frying pan.

1. Traditional: fry 3 medium sized potatoes and an onion, finely chopped so that they are soft. Remove the excess EVOO and add 3 large beaten eggs (the key is not to beat them too much). Salt to taste and cook until it sets and turn over.

Vegan omelet: we repeat the previous process substituting the egg for the mixture of chickpea flour and water. It looks amazing by the way👍

3. The stuffed one: we repeat the process of the traditional one. We cut the tortilla in three layers, for that it has to be very thick. In the first layer I added Havarti cheese and Serrano ham and in the second layer I added tuna with homemade mayonnaise, but you can use whatever you like best.

4. The fit: cook the potato until it is soft but does not fall apart and cut into small cubes. We will only use egg whites, whip them and add the potato. In a frying pan with a pinch of olive oil we will make it as usual

5. The undercooked. For those who like their eggs raw. The process is the same but we will put the frying pan over high heat so that it browns and does not set completely.

Pumpkin and caramelized onion: cook the pumpkin. We cook the onion (sweet) in a saucepan. It is a long process because I wanted the sugar in the onion to caramelize it, so with the fire at min we let the onion cook with a drop of water and a lot of patience. Add the eggs and the pumpkin and finish as in the traditional way.
