We're almost done, I promise. Now the moment of truth... Let's put the tortilla on the comal (well, grill or frying pan) being careful not to burn yourself (remember we already had it preheating).

Let them sew and when the color changes, turn them over (use a shovel so you don't burn yourself). Another way to know if they are ready to flip them is to look at the edges, if you notice that they are coming off it is time to flip them.

Once they are flipped, make sure they cook well, turning them from time to time. And once they puff up they are ready. Although this doesn't have to keep you awake, if they don't puff up the first time, don't get discouraged. They didn't puff up for me either, but practice makes perfect.

Knead well until the dough has the desired consistency. That is, it should not be too watery or too stiff.

The consistency is similar to play doh play dough. It should allow you to handle it without sticking too much in your hands and therefore in the mold. Let the dough rest. Cover it with a wet blanket so that the dough does not dry out. Wash your hands.

Once it has rested you will form the dough balls and put them in a separate plate to flatten them and form the tortilla. In the picture I show you a trick to know if the dough has good moisture or not. If the edges of the dough show cracks it means that your dough lacks a little bit of water, on the other hand if you see that there are no cracks it means that your dough is perfect with the humidity. When your dough balls are already formed it is time to turn on the griddle or frying pan over medium low heat that you are going to use to heat them. It has to be hot by the time you have your first tortilla made.

Then, with the help of two plastic bags and a press we are going to form the tortilla. Put the dough ball between the two bags so that it does not stick to the surface of the griddle or plate. Note: if you don't have a tortilla press don't worry, use a plate or something round to apply pressure and the tortilla will form. In this case I used an electric tortilla press, but I didn't turn it on.
