Remove the skin from the scallops and place them in a rectangular container (I used a tupperware container).

Add the juice of two lemons, a dash of soy and the rest of the spices. The fillets should be coated (add more lemon or soy if not). Turn the fillets over and shake the bowl a little so that the marinade permeates the fish.

Cover and leave in the refrigerator for at least 4 hours or better, overnight. Use the delight to taste, in my case like this:
