Soak the textured soybeans in a container for at least two hours to hydrate them.

Drain the soybeans well in a colander, removing as much water as possible. Place it in a bowl, and add the chickpea flour, the spices and the previously chopped garlic. Stir with your hands, mix by squeezing and integrate all the ingredients well. If it is too wet, add more chickpea flour to absorb the water.

Heat a frying pan with a little EVOO. Take portions of the mixture and shape them into patties (as thin as possible), and heat them in the frying pan over medium heat: 3-4 minutes per side (without burning). I had 10 portions (2 portions per serving).
