Chickpea spaghetti with spinach pesto 🥬🍝

▪️For pesto: - about 10 large basil leaves - 150 gr spinach - 30 gr pine nuts or some other dried fruit. - 50 ml EVOO - a clove of garlic - half a teaspoon of salt - a teaspoon of lemon juice - a splash of water Whisk all the ingredients and set aside.

While we boil the pasta (in my case I used chickpea spaghetti), we sauté first the cherry tomatoes for a few minutes and then we also add the sliced mushrooms. When these are ready, we add to the pan the pesto, the cooked pasta and a couple of spoonfuls of the water that we have used in the cooking of this one. Stir everything well and it is ready.
