Cut the breasts into pieces. Add a dash of EVOO and all the spices to taste. Leave to marinate in the fridge for at least 2 hours, if it is overnight, better.

Take the marinated chicken, put it in a frying pan and fry it (it does not need any more oil than the marinated chicken). Cut the leek and add it. Once sautéed, add 1 small brick of fried tomato (or if you have homemade it also works). Leave it for a few minutes and add the whole can of coconut milk. Stir well and let it thicken.

Taste and correct the spices according to taste.
