Cook the rice so that it sticks together, not moving it too much while cooking. Let it rest stretched out in a bowl to air out. To assemble the rolled sushi (uramaki): Spread rice on a mat covered with plastic wrap. Add toppings and roll up. Cut carefully so that it does not break. The other type (nigiri), is made by taking a pile of rice, shaping it and putting the salmon or any fish on top. Garnish with sesame seeds on top.
